In recent years, concerns regarding food safety have increased significantly.
Microbiological hazards, pesticide and antibiotic residues, improper use of food
additives, chemical contamination, food adulteration and allergens are among the most
common issues affecting food safety.
The main objective of this study is to identify the principal hazards encountered in the
food industry, examine prevention methods, and evaluate the effectiveness of the
FMEA (Failure Mode and Effects Analysis) methodology as a preventive risk
management tool.
The findings of this study indicate that, in the four food industries analyzed (production
of processed meat products, feta cheese, pasteurized juice and flour), microbiological
hazards represent the most significant and frequently occurring risks. Furthermore, the
FMEA methodology can be applied across different types of industries and significantly
contributes to the identification, analysis, and prevention of potential hazards. In
addition, it can be effectively integrated with other quality management systems.
