A strong global interest and a rising public awareness on environmental issues have emerged recently alongside a continuous effort to find ways and methods to reduce the impact of business and industry on nature.
Life Cycle Assessment is one of the above mentioned methods. More specifically, Life Cycle Assessment (LCA) is an environmental management tool with two objectives:
1. Compilation and evaluation of environmental performance of a product or a service throughout its life cycle, "cradle-to-grave", (extraction and processing of raw materials, manufacturing, transportation, distribution, use, reuse, recycling and disposal).
2. Support of the decision makers so as to select effectively between alternative products and services or to make decisions that will improve the production process associated with the environmental performance.
LCA is often used in food and beverage industry since it requires large inputs of resources and causes severe environmental consequences.
This thesis deals with LCA, whether it can contribute to an integrated management system as well as its application in the beverage industry.
More specifically, the purpose of the thesis is to analyze the LCA methodology and its application in the production of lager beer in order to identify and recognize which parts of the life cycle are crucial in terms of environmental impact. The LCA study will include:
• The production of cereal through agriculture,
• Cereal processing so that barley is converted into lager beer,
• And beer packaging in glass bottles.
Due to the endeavor's great complexity to include all three stages in one LCA, each stage will be presented separately through an individual life cycle analysis.
This thesis also analyzes redesign proposals targeting the improvement of the production process of lager beer in order to improve the quality of the product and make it eco-friendlier. For the reason outlined above, a re-LCA has been conducted so as to confirm whether the redesign proposals did make the product friendlier to the environment and improve its quality.
Finally, a financial analysis has been conducted so as to verify whether the redesign proposals in addition to quality and environmental improvement of the product, did make the product more profitable.
