This master's thesis examines the olive production sector in Greece, in the European Union countries where this tree and its products thrive, but also in countries outside the EU that have penetrated this sector in recent decades.
After a historical review of man's involvement with the olive tree, where we will recount when people began to engage in the production of this good and its evolution over time, a study will be conducted to understand the health benefits of consuming olive oil and its derivatives, both with scientific research data and medical evidence.
After analyzing the olive oil production process - from the olive fruit to its final form, we will examine the turnover that includes the professionals involved, as well as the cultivation, packaging and distribution methods. By cross-referencing data and information from both the domestic and broader markets, we will understand how this sector operates and how each stakeholder gains added value from the moment the fruit is harvested until it reaches the household basket.
The European Market is subject to a framework of Regulations and Laws regarding the trade of products between its states and those outside it. Part of this work will be a study of the legal frameworks governing olive oil and its derivatives.
The work concludes by examining the position of olive oil on the global map. Subsequently, the position of substitute products will be explored as well as the prospects for its dissemination to new markets, with the aim of promoting the interests and sustainability of both the companies investing in the sector and the ordinary farmer.
