Abstract
This thesis presents a techno-economic analysis and evaluation of a newly established company engaged in the processing, standardization, and export of table olives. The company is planned to be located on privately owned land in West Greece, a region with significant olive production activity, ensuring direct access to high-quality raw materials and strategic proximity to key transportation networks.
The study provides a detailed overview of the morphology, chemical composition, and varieties of table olives, with special emphasis on the Kalamata olive and its Protected Designation of Origin (PDO) status. Furthermore, it examines both the domestic and global market landscape for table olives through strategic analytical tools, including SWOT, PESTLE, and Porter’s Five Forces, offering a comprehensive understanding of the competitive environment.
The company aims to penetrate high-value export markets, initially targeting Europe and the United States, with plans to gradually expand to Asian markets. Particular emphasis is placed on the production of certified, high-quality products and the gradual diversification of offerings through new olive formats and packaging solutions.
The financial analysis included in the study indicates promising prospects for viability and profitability, with positive cash flow expected from the second year of operations and estimated sales of 5,000 kilograms. Finally, the thesis concludes with strategic recommendations for business development, investment consolidation, and long-term establishment in an evolving and competitive international environment.
