The modern era is characterised by rapid developments and the speed with which information changes in all areas. Globalisation is undoubtedly intense, which leads supply chains not to remain static, but to constantly evolve in a dynamic way, adapting their characteristics and their management. Alongside the evolution of supply chains, we are also witnessing the rapid development of the technology that supports them. This dynamism exposes them to even more risks and challenges arising from the environment.
The aim of this paper is to present and analyse the characteristics of the cold supply chain. In particular, special attention will be paid to the technologies used, but also to the correct practices applied throughout cold transport. Through the example of the Athens Central Market in Renti, our aim is to examine the challenges it faces and whether these theoretical practices are applied in practice and to what extent.
First, the theoretical part is presented in which concepts such as the supply chain, cold supply chain, the legal framework governing them and the necessary systems and practices that guarantee their smooth and efficient operation are analysed extensively and in depth. This is followed by the practical part of the thesis, which is the conduct of the case study of the Athens Central Market in Renti. In particular, the history of the market is mentioned, followed by a description of the facilities, geographical location, structure and practices followed on a daily basis.
After depositing and studying the literature data on cold supply chain and market study, the paper concludes with the presentation of the conclusions and literature.
