Food waste is one of the most significant challenges facing modern agri-food systems, as it is associated with considerable environmental, economic, and social impacts. Alongside the increasing demand for food production, substantial quantities of edible food and agri-food by-products are discarded throughout the supply chain, resulting in the inefficient use of natural resources and increased environmental burden.
The aim of this thesis is to provide a literature-based review of the valorization of agri-food by-products through upcycling practices within the framework of the circular economy and sustainable development. The study examines the concepts of food loss and food waste, their environmental, social, and economic impacts, as well as the international policies and strategies developed to reduce them.
Particular emphasis is placed on the upcycling potential of major agri-food by-products, including those originating from coffee processing, brewing, dairy production, and aquaculture. The main valorization technologies, the production of high-value-added products, and the environmental and economic benefits associated with these practices are presented and discussed.
The findings of the literature indicate that upcycling represents an effective strategy for reducing food waste, improving resource efficiency, and promoting the transition towards a circular economy. Nevertheless, its wider implementation requires further technological advancements, supportive regulatory frameworks, economic incentives, and greater acceptance by both industry and consumers.
