This paper focuses in the analysis of the franchising system in Greece and specifically of the
catering industry. The first chapter presents the basic concepts of market function, the
market forms and the determinants of supply and demand of goods. The second chapter
defines the institution of franchising and presents the types of franchise as they exist today,
as well as their economic and commercial dimension. The third chapter is devoted to the
history of franchising, at international and domestic level and with the use of statistical
reporting, conclusions are extracted for the development of franchising system in Greece.
Finally, the fourth chapter analyzes the franchising network and the financial performance of
Goody's group during the years of economic recession in our country.
