Aim of the present project is to configurate a formula of reducing the cost that comes out of food logistics procedures as well as evaluating the level of food logistics organisation. The methology that was used throughout the entire project was extent bibliographic examination and the tool of interview in order to harvest all of the necessary information and data that was needed. The findings that arise suggest that even thought the level of organisation is low in Greek hospitals, the members of the staff however seemed motivated to accept and adapt new techniques in order to improve the outcome of their every day tasks, easy, fast and with no errors, as far as ordering, transport and storage of food is concerned. The results of this paper can be used as a start point, for the extension of this project in all of the hospitals in Greece, in order to come up with common practices for achieving and maintaining an optimum level of organization, regarding the area of food logistics in aggement with the HACCP's directions and appliances.
