Tourism is one of the largest and fastest growing industries around the world. An important sector of tourism is that of the hospitality sector, which has negative impacts on the environment by operating on the basis of “take-make-dispose” model. In Greece the sector is the main pillar of its economy and shows continuous growth both in facilities and services.
The hospitality sector appears to have a huge production of solid and liquid waste. Also, it has water and energy requirements that depend on many factors because of its facilities complexity. The development of the sector has significant responsibility for harming the natural environment by producing large amounts of carbon dioxide and by creating billions in monetary value of waste every year.
In recent years, however, the hotel industry has made some changes to its practices, guided mainly by the needs of today. The focus on sustainable development of hotels is succeeded by implementing practices, that protect the environment, practices of circular economy.
The circular economy is based on the combination of theories such us environmental economy, ecological economics and industrial ecology and its bases on three basic principles: Reduce – Reuse – Recycle. These principles are completely opposite to those of the linear economic model and have benefits both economically and environmentally.
In this dissertation, you will find a study of the Aldemar Resort Group, one of the largest hotel chains in Greece, which includes four and five star hotels. Aldemar Group have a lot of different facilities and plenty offering services. This causes large amounts of waste and has high water and energy consumptions. Aldemar Group is aware of sustainable development issues and implements practices of circular economy in order to minimize its negative impact to the environment. In this study, we analyzed the practices which have already been implemented and the consumptions as well as the waste production of Aldemar Group for the period of 2017 until 2019. Based on the results, as well as, the bibliography, suggestions for new practices were made.
