This thesis was developed in the context of the master’s program of the Department of Business Administration with specialization to International Total Quality Management (MBA-TQM). In today's era, consumer safety and the circulation of healthy and safe food and beverages on the market is becoming increasingly important. But many small-scale businesses, like kiosks, struggle to identify methods that will satisfy the expectations of consumers. However, food and beverage hygiene assurance systems such as the HACCP system can ensure these business objectives. The main objective of this thesis is the description of the HACCP plan in relation with its application in kiosks. The HACCP system is analyzed to better understand the actions implemented in a kiosk business. Specifically, the importance of the prerequisite programs and their relationship with the HACCP system, the types of risks that are identified and controlled and the methodology for creating a HACCP plan are examined. Additionally, a widely distributed beverage, bottled water, is analyzed in terms of product analysis and the creation of flow chart, as instructed by the HACCP plan. Finally, the legislative framework regarding the latest requirements and health regulations concerning kiosk-type businesses is listed.
