In this master thesis new travel and tourism trends are being discussed, especially in the hospitality industry, through the scope of tourism demand and supply in order for the hospitality industry entrepreneurs to be able to respond more effectively to the demand. By using the geographical tourism system, the nature of tourism is better understood, as well as its impact on the economy, society and on the environment. Moreover, the stages that comprise the tourist behaviour and tourist experience are being analysed in and out of the COVID-19 context. Then, some new technological, digital, environmental, societal and work trends are being presented and specialized in the hospitality industry. Moreover, a questionary of 244 participants is being made to investigate the tourism demand and travel behaviour as well as the reaction of the Greek entrepreneurs of the industry to the new trends that arise. The research reveals that although the fear of COVID-19 infection belongs to the past, its impacts on tourism consumer behaviour are being perceived in the need for more but smaller in duration vacation, the need for recreation and wellness as well as in the expectations of high standard measures of hygiene and safety. In addition, a partial discrepancy emerges between the Greek supply and demand in the hospitality industry, with the demand part considering technological innovations less important than sustainability. Thus, there is a need for hosts to focus on sustainable practices as well as leveraging certain social media, such as Instagram, to strengthen the trust level of businesses with all stakeholders and communicate effectively with them.
